I made this after seeing it on your blog while...Hi<br /> I made this after seeing it on your blog while I was making your passionfruit marshmallows. The next day a friend mentioned banoffee pie so it was clearly meant to be. I didn't like it so much at first ,(although other people did); I thought the flavors and textures were too distinct but it has mellowed quite well over 3 days. I also live in Cambridge and you can get digestives at Star markets.(they sell ginger and chocolate digestives as well which would make a nice crust I think.).
